Mexican Rice

Mexican Rice

Long Rice 2 cup
Oil for frying
Tomato Paste 1 cup
Minced Garlic 1 tbsp
Salt to taste
Freshly Ground Black Pepper 1 tbsp
Cumin Powder 1 tbsp
Water as needed
Coriander Leaves, finely chopped for garnish 3-4 tbsp


1. Wash rice and in a large pan, add 4-5 cups of water, 1/2 tbsp oil and 1/2 tbsp salt and boil it.
2. When it's boiling, add rice. when cooked, keep aside.
3. Heat the oil in a pan, add tomato paste, garlic, salt, black pepper and cumin, mix well and fry for 4-5 min.
4. Add cooked rice and fry it, mix well.
5. Garnish wit coriander leaves.
6. Serve hot rice with curd.
